Beans, beans the magical fruit, the more you eat...the better your body can get at digesting them! Seriously, the song really needs a better version! Beans are a great source of plant-based protein, complex carbohydrates and fibre, and the more you include them in your diet, the better your body can become at breaking them down. Plus, your body will adjust to the increased intake of fibre. An added bonus: they’re cheap, quick and delicious! •
I built this black bean bowl on a bed of wild brown rice, and topped it with chopped kale, baked zucchini, salsa and of course avocado! I sautéed the beans with garlic, orange bell pepper and spices, and then I devoured it! •
